This Oven-baked Prawn Paella is a delicious and easy way to enjoy the vibrant flavours of Spain at home. Oven-baked Prawn Paella

INGREDIENTS
30g (1oz) chorizo
1 onion (or 1 cup frozen)
1 red (bell) pepper
1 heaped tsp garlic paste
1 tbsp tomato paste
1 tsp sugar
1 tsp smoked paprika
half a tsp turmeric
120g (1 cup) basmati rice
200ml (1 cup) chicken stock
100g (1 cup) frozen peas
250g (9oz) cooked and peeled king prawns (shrimp)
1 lemon
DIRECTIONS
STEP 1
Pre-heat the oven to 220C/200C Fan/400F.
Heat a wide frying pan on a high heat. Chop the chorizo up small, then add to the pan. Fry until charred and the chorizo has released it’s fatty juices - 3-4 mins. Use a slotted spoon to remove the chorizo from the pan and set aside.
Peel and finely chop the onion. De-seed, trim and roughly chop the bell pepper.
STEP 2
Turn the heat under the pan down a little and add the onion and pepper to the chorizo-y oil. Fry until just starting to soften, 4-5 mins. Add the garlic paste, tomato paste, sugar, smoked paprika and turmeric. Stir-fry for 30 seconds, then remove from the heat.
Stir the basmati rice and peas into the pan, making sure every grain of rice is coated with the mixture. Then transfer it all to an oven-safe baking dish.
STEP 3
Put the now empty frying pan back on a high heat and add 200ml (1 cup) chicken stock. The chicken stock can be fresh or made with one stock cube. Bring the chicken stock to the boil. Once boiling, pour it over the rice mixture and gently stir through. Cover the dish, then bake in the oven for 12 minutes, until the rice is just cooked.
STEP 4
Add the cooked prawns, stir through and return to the oven for a further 5-7 minutes.
Wash, zest and juice the lemon.
STEP 5
Remove the paella from the oven, check everything is cooked and piping hot, then stir through the lemon zest and juice. Serve immediately.
